Ikinokura Distillery – ‘Ikikko: Koji’ 8yr Sherry Cask Japanese Whisky (700ML)
This unique Japanese whisky is produced with koji by Ikinokura Distillery on Iki Island in Nagasaki, Japan.
Ikikko begins as shochu produced in accordance with the Iki Shochu G.I. which stipulates a mash bill of two-thirds barley and one-third koji rice. The use of koji rice imparts a unique umami throughline and the aging in Oloroso sherry casks doubles down with additional layers of dried fruit and nuts.
