Wilderness Trail Distillery – ‘Bottled-In-Bond’ 6yr Single-Barrel Bourbon (750ML)
Kentucky’s Wilderness Trail Distillery began releasing products only in the last couple years, patiently waiting for their four-year, bottled-in-bond bourbon to come of age. A couple of years later, and the distillery is now slowly releasing its first six-year-old bourbons. This is their rye recipe (24% rye, 12% malted barley) made using the unique sweet mashing process, and since it’s drawn from some of the distillery’s oldest stocks, distilled on the original pot still.
Tasting Notes:
Nose: Robust aromas of apple and peach, backed by vanilla, caramel candies, cardamom, and clove.
Palate: Initially features peach and apple, followed by a surge of cardamom and anise, with touches of caramel and vanilla.
Finish: Dominated by baked orchard fruits, transitioning to drying oak spice with cardamom, clove, and anise.
